Sanford restaurant owner makes remarkable recovery at Encompass Health

ALTAMONTE SPRINGS, Fla., May 11, 2026 — After surviving a serious motorcycle crash during Bike Week, Sanford restaurant owner and mother of 16 Shantell Williams has returned home following an inspiring recovery at Encompass Health Rehabilitation Hospital of Altamonte Springs.

Williams arrived at the hospital in March with multiple traumatic injuries, including a shattered pelvis, a broken breastbone and fractures in both arms. Physicians initially estimated she would need four months of rehabilitation before walking again, but Williams exceeded expectations, completing her inpatient rehabilitation in just two months.

On Saturday, she walked out of Encompass Health Altamonte Springs to a standing ovation from family, friends and staff.

“This is what I've been working for. It feels beyond good. I'm so blessed,” Williams told WKMG-TV.

During her stay, Williams participated in intensive physical and occupational therapy aimed at restoring strength, mobility and independence. Her care team said her progress reflects both her personal drive and the structure of Encompass Health's comprehensive rehabilitation program.

“Shantell has made a remarkable recovery,” said Eliam Fuentes-Tirado, medical director at Encompass Health Altamonte Springs. “I know her dedication and spirit will push her to work hard as she continues to recover.”

Williams has now returned to her downtown Sanford restaurant, where the community supported her throughout her recovery. She will continue outpatient therapy and hopes to return to riding her motorcycle sooner than originally projected.
